Searing Meat
Essentially, searing cooks the outside of the meat very quickly. By
doing so, you trap the meats natural moisture and juices inside of it.
This is accomplished by heating your BBQ grill up to a higher than
normal temperature, say 400 degrees F. to 500 degrees F.
All you have to do is cook your meat for a short period of time, usually
just a few minutes and then back the BBQ temperature off to 300 or 400
degrees F. The best way to learn is by practice, so the first time you
try, don't use your most expensive steak. Also be careful about your
BBQ's thermometer, not all thermometers are accurate. You may need to
use a meat probe to get a good reading.
